Sharing Sunday Supper

John and Kirsten joined us for dinner tonight so I altered my menu a bit.  Kirsten is prejudiced against beans and peas so I made a Broccoli Salad.  I also glammed up my pasta a bit by adding some onions, tomatoes and spinach.  After dinner we spent a couple of hours playing games and visiting.  It was a happy night. 


I am sharing these recipes for those nights when you need a quick and easy meal.  Enjoy.




Smoked Sausage with Mushrooms and Onions

1 pkg. Smoked Sausage, cut into bite size slices
12 oz. sliced mushrooms
1 onion, sliced
2 T. butter

Melt butter in a large skillet over med high heat.  Add remaining ingredients and sauté, stirring often until onions are tender and sausage is browned.  Print Recipe
 

 
Saute onions, garlic, tomatoes in 4 T. olive oil
until tomatoes start to pop.
 
 
Add cooked Angel Hair Pasta to the pan with the tomatoes.
Add spinach and toss until spinach starts to wilt.
Season with salt and pepper.
Add half cup of pasta cooking water and the spinach.
Toss until spinach is wilted. 
Add Parmesan Cheese and toss again.
This also makes a great meatless meal by itself.
 
Pasta with Tomatoes and Spinach
 
1 lb. Angel Hair Pasta, cooked according to package directions
1 small onion, diced
2 cloves garlic, minced
4 T. olive oil
1 pint cherry tomatoes
6 oz. Baby Spinach leaves
Salt and Pepper to taste
1/4 c. Parmesan Cheese, plus extra to serve at table
 
Heat oil in large saucepan over med high heat.  Add onion, garlic and tomatoes. Saute until onion is tender and tomatoes start to pop.  Add pasta to pan.  Season with salt and pepper. Add spinach leaves and 1/2 c. of the pasta cooking water.  Toss until spinach starts to wilt.  Add cheese and toss until all ingredients are combined.  Serve with additional cheese sprinkled on top.  Print Recipe
