I served this salad as a first course, but it is nutritious and filling enough to serve 2 as a light lunch.

Crab and Avocado Salad
Ribbons of Romaine Lettuce, topped with a delicious Crab Salad, surrounded with fresh, creamy Avocados.
Prep time: 5 MinTotal time: 5 Min
Ingredients
- 1 head Romaine lettuce, cut into ribbons
- 1 lb. lump crab meat
- 1/3 c. Miracle Whip
- 1 t. Dijon Mustard
- Juice of 1/2 lemon
- 2 t. capers, chopped
- salt and pepper, to taste
- 2 avocados, pitted, peeled and sliced
Instructions
- Pick through the crab meat to ensure there are no bits of shell left on it and place it into a bowl.
- Whisk together the Miracle Whip (or mayo, if you prefer), mustard, lemon juice, and capers. Add to the crab and toss gently to coat so as not to break up the crab too much. Taste and season with salt and pepper.
- Divide the lettuce between 4 plates, top each with 1/4 of the crab salad, and garnish with 1/4 of the avocado slices.
