Old-Fashioned Baked Macaroni and Cheese #SundayFunday

This was my Mom's recipe.  It is the first recipe that I ever made by myself. There was no recipe, but I had helped my Mom enough that I didn't need one.  I was about 9 years old and surprised my Mom by having dinner ready when she got home.

Sneha of Sneha's Recipe is hosting this wide-open event, saying only that the recipe should be baked.  In the past week, I have made this Mac and Cheese, a French Toast Casserole, a baked chicken dish, Muffins, numerous batches of cookies, pizza, and a tart.  All of which were baked.

All I needed to do was choose what I wanted to share.  I had already shared the Apple Cinnamon French Toast Casserole in 2022 with a printable recipe card.  I shared the Vanilla Sprinkle Donut Cookies with a  Book Review on Thursday.  I will share the muffins on Muffin Monday at the end of the month.  

The Baked Sesame Honey Chicken and the Cheeseburger Pizza are recipes I have shared, but like this Macaroni and Cheese, they need to be rewritten with a printable recipe card.  So stay tuned for those.

Mac and Cheese

The Macaroni and Cheese Recipe that I first shared with you in 2014 won out.  I have made and shared other Macaroni and Cheese Recipes, but this one remains a family favorite and is the one made most often.

I am writing this recipe using a Monterey Jack blend cheese, but I use whatever cheese I have in my refrigerator, shredding it all together using my food processor.  You can use pre-shredded cheese, but I find that shredding your own makes for a better casserole.  If you don't have a food processor, you can use a box grater or just cut the cheese into small slices or dice.  

As with all old-fashioned recipes, handed down over the generations, the amounts are suggestions.  Make this recipe yours by using as much and as many kinds of cheese as you like.  You can use light cream if you have it, but milk works just fine, too.  When I don't have cream, I might add a bit more butter, but that is strictly your call.  The sprinkling of paprika makes for a nice, browned, crunchy crust.  If you don't like that, omit the paprika.

Old-Fashioned Baked Macaroni and Cheese

This is a "dry" macaroni and cheese, passed down from my Mom. You will enjoy all the cheesy goodness without the pasta being drowned in sauce.

Ingredients

  • 1 (14 oz.) box of macaroni, cooked per directions on box
  • 2 cups of shredded Monterrey Jack Cheese
  • 1/2 c. half and half
  • 2 T. butter cut into 8 pieces
  • salt and pepper, to taste
  • Paprika

Instructions

  1. Cook the Macaroni according to the package directions, reducing cooking time by one minute.
  2. Place into a buttered casserole. Stir in the cheese, cream, salt, and pepper.
  3. Put the butter pieces on top and sprinkle with paprika.
  4. Bake in a preheated 350* oven for 30 minutes, until hot and bubbly with a golden brown top.
