02/05 Ambergris Cay, Belize...This was one of the most romantic trips of our marriage. We were in the middle of nowhere, no tv, no phones, no computers, no cars. Restaurants were a 20 minute stroll either way down the beach. I LOVED this trip.
As you can see this trip was nearly 20 years ago but I still remember it fondly. We stayed at an older resort that consisted of condos. The restaurant/lounge was an old, outbuilding with a sand floor and rickety tables.
Each morning at breakfast (provided) they would announce what they were serving for dinner that evening. Should you choose to eat at the resort there was a nominal fee or you could walk 20 minutes down the beach in either direction where there were other resorts/restaurants.
The bar was open in the evenings after diving with a limited choice including the Panty Ripper. One afternoon, following our dives, the crew gave us a boat ride into the city where we enjoyed lunch and shopping. While there Frank and I picked up bottles of wine, some cheese, and some bread, that we shared that evening with the other 2 guests and the crew/staff of the resort.
Belizian Panty Ripper
Ingredients
- 1 1/2 oz. coconut rum
- 2 oz. pineapple juice
- splash of grenadine
- Maraschino cherry and/or pineapple wedge for garnish, if desired
Instructions
- Fill a glass with ice. Add the rum, juice, and grenadine. Stir to combine. Garnish, if desired, and serve.

Rum and I are not friends. But I can imagine drinking this on a Caribbean beach in Belize. Yum! Thanks for joining in the fun.
