I used a rotisserie chicken for this salad but it is also a great way to use leftover chicken if you have it. I served it for dinner one night for 4 of us. Lunch for 4 the following day, and as a side salad with grilled sausage sandwiches for 6 of us. It makes a lot of salad.
This salad is filling, flavorful, and beautiful. It takes only minutes to make but it is best served chilled. It is a great dish to bring to your next potluck or picnic.

Pasta Salad with Chicken and Peaches

Ingredients
- 1 lb. pasta, cooked per package directions and rinsed in cold water.
- 1 rotisserie chicken, bones, skin, and gristle removed, meat shredded
- 1 c. frozen peas
- 1 stalk celery, diced
- 8 oz. cheddar cheese, diced
- 10-12 basil leaves, chopped
- 2 lg. fresh peaches, pitted and cut into bite-size pieces
- 1/2 c. mayonnaise
- 1/2 c. Miracle Whip
- 1/2 c. sour cream
- juice of 1 lemon
- salt and pepper, to taste
Instructions
- Place the chicken, pasta, peas, celery, cheese, basil and peaches into a large bowl.
- Whisk together the mayonnaise, Miracle Whip, sour cream, and lemon juice. Season with salt and pepper.
- Pour over the pasta ingredients and gently fold to coat.
- Chill for at least 2 hours before serving.
