This Brussels Slaw is a great addition to your picnic or BBQ. It is nutritious, colorful, and can be made ahead as it improves as the flavors meld.

Brussels Slaw
Fresh Brussels Sprouts are shredded and tossed with dried cherries and almond slices before being dressed in a sweet and sour vinaigrette.

Ingredients
- 1 lb. Brussel sprouts
- 1 c. dried cranberries
- 1 c. honey roasted almond slices
- 1/3 c. olive oil
- juice of 1 lemon
- 1 T. hot honey mustard
- 1 T. honey
- salt and pepper, to taste
Instructions
- Shred the brussels sprouts and place into a large bowl. (I use a food processor with the shredding blade attachment)
- Add the cranberries and almonds.
- Whisk together the oil, lemon juice, mustard, honey, salt, and pepper until emulsified.
- Pour over the ingredients in the bowl and toss to coat.
- Refrigerate for at least 2 hours and toss again before serving.
