    Both my Mom and my Mom-in-Law have been gone 8 years now, having died one month and one day apart.  Both were over 90 years of age and we are very grateful we had so much time with them and so many wonderful memories.  They loved each other, their families, socializing, and life.  They were always laughing and smiling.  We miss them every day.

    I know they will be smiling down upon us as we gather at our daughter, Amy's house today for a Mother's Day Brunch celebrating me and my daughters, all of whom are wonderful moms and mother figures and role models for the children in their lives.

    Sausage Balls

    Sausage Balls

    These little pop-in-your-mouth treats are a cross between a muffin and a sausage patty. They are the perfect addition to your Mother's Day Brunch.
    Prep time: 5 MinCook time: 25 MinTotal time: 30 Min

    Ingredients

    • 1 lb. bulk pork sausage
    • 2 c. Baking Mix
    • 4 c. shredded Colby Jack Cheese
    • 1 T. sweet paprika
    • salt and pepper, to taste
    • Olive oil spray

    Instructions

    1. Combine the pork, baking mix, cheese, paprika, salt, and pepper.
    2. Use a 1 Tablespoon size cookie scoop to measure out the balls and place onto a baking sheet that has been lined with parchment or a silicone mat.
    3. Spray or brush with olive oil and place in a preheated 350* oven for about 25 minutes, until browned and an internal temperature of 145* is reached.

    1. Wendy you were lucky and fortunate that both your mother and mother in law loved each other. It is rare. Usually there is always some tension between the two mums. Am so happy you had so many years with both of them.

    2. My mom and my mother-in-law don't have the chance to socialize much since Jake's family is a 9-hour drive away. But they do get along. I can't wait to try these sausage balls. They look SO savory and tasty.
