Apple Banana Muffins and a Book Review #LItHappens

These muffins were inspired by the novel, North Woods, which I had chosen for our Lit Happens Book Club.

Apple Banana Muffins

These muffins, filled with apples and bananas, are flavorful and delicious.  They make a wonderful breakfast or snack.

I belong to an online book club that we call Lit Happens.  It is a small group, we meet on Facebook each month and one of us chooses a book to read and discuss.  The discussion is led by the host posting questions we each answer as we read and finish the book. 


North Woods

I hosted during May and chose the novel North Woods by Daniel Mason.  We decided to concentrate on Historical fiction this year choosing books from different areas of the United States.  This novel is set in Massachusetts, covering the northeast territory of the map.

This novel is very different from others that I have read.  Instead of following a person, this novel follows a house and all the different occupants over the years.  Some of these occupants were human, some were animal, and some were the flora and fauna that took over when the house was unoccupied by humans.

The first occupant of the house killed a man who had just eaten an apple and buried the body.  As the body decomposes an apple tree sprouts.  The second occupant finds the house after tasting one of the apples from the tree.  This person buys the land and creates an orchard that becomes famous for having the best apples you have ever tasted.

This novel starts in 1760 and follows the house and it's occupants, to present day and into the future.  I decided to go with Apple Banana Muffins.  Apples, of course, because they were with the house from the beginning, and Bananas because this describes most of the house's occupants.

I wish I could say that I enjoyed this novel that I chose, but I didn't.  I probably would not have finished the book had I not been hosting.

This book club does not require that you have a blog.  Some of us, however, are food bloggers and are often inspired to make a recipe from the books we read and movies we watch.

Apple Banana Muffins

Apple Banana Muffins

These muffins, filled with apples and bananas, are flavorful and delicious. They make a wonderful breakfast or snack.

Ingredients

  • 1 apple, peeled, cored and cut into small dice
  • 1 small, over-ripe banana
  • 3/4 c. sugar
  • 1 c. flour
  • 1/2 t. baking soda
  • 1/3 c. butter, room temperature
  • 1 egg
  • 2 T. milk
  • pinch of salt
  • 1/2 t. cinnaspice blend or 1/4 t. each cinnamon and nutmeg
  • 1/2 t. vanilla

Instructions

  1. Mix together the flour, baking soda, cinnaspice mixture, and salt. Set aside.
  2. In large bowl of stand mixer, beat the butter and sugar together until light and fluffy.
  3. Add the egg, and mix to combine, then stir in the milk, banana, and vanilla.
  4. With the mixer on low speed, stir in the flour mixture, just until combined. Fold in the apples by hand and divide between 12 muffin cups that have been treated with baking spray.
  5. Bake in a preheated 375* oven for 20 minutes, until browned and a skewer inserted in the center of the muffins, removes cleanly.
