Tuna Pasta Salad #SundayFunday

This is not your ordinary Tuna Pasta.  Lightly dressed with tons of veggies and extra tuna, this salad is a complete meal in itself.

Sue of Palatable Pastime is hosting today and invited us to join her in cooking up some pasta.  I have summer on the brain so I made a great Tuna Pasta Salad perfect for summer get-togethers.  Let's take a look at what the others chose to make.......
Tuna Pasta Salad

This salad is lighter than what we have come to expect from Tuna Pasta Salad.  It has very little mayonnaise and tons of vegetables not normally associated with Tuna Salad.  Your family and friends will be surprised and pleased.

Tuna Pasta Salad

Tuna Pasta Salad

This is not your ordinary Tuna Pasta. Lightly dressed with tons of veggies and extra tuna, this salad is a complete meal in itself.

Ingredients

  • 1 lb. sturdy pasta, I used Penne
  • 1 T. olive oil
  • 2 (7 oz) cans Albacore tuna, drained
  • 1 can sweet corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely diced
  • 2 t. yellow mustard
  • salt and pepper, to taste
  • 1/4-1/2 c. mayonnaise

Instructions

  1. Cook the pasta according to package directions to desired tenderness. Rinse and drain. Toss with the olive oil and set aside to cool.
  2. When cooled place into a large bowl and mix in the tuna, corn, peppers, and onions. Stir in the mustard and season with salt and pepper.
  3. Add 1/4 c. mayonnaise and gently toss to combine adding additional mayonnaise if needed. Chill until ready to serve.
