Million Dollar Chicken Casserole #SundayFunday

If you are of a certain age, you might remember this dish from your childhood.  It was popular in the 50's and 60's.  It is easy, delicious, and quick to make.

I am hosting this week and asked the others to join me in sharing recipes that start with rotisserie chicken.  

Some of these recipes can be made with leftover chicken, but I find that starting with a store-bought rotisserie chicken can save a lot of time on busy days.  Some of our members are non-meat eaters and have shared some great ideas for side dishes to serve with rotisserie chicken.

Million Dollar Chicken Casserole

I served this casserole over pasta.  It is not a light food, it is rich and gooey with cheese so a little goes a long way.  This casserole will generously serve 6 with leftovers for lunch the next day.

I'm not sure where this recipe first originated, but it contains both Campbell's soup and Ritz Crackers so I'm sure it was on the back of a box or can.  I substituted Panko for the Crackers as that was what I had on hand.

Million Dollar Chicken Casserole

If you are of a certain age, you might remember this dish from your childhood. It was very popular in the 50's and 60's. It is easy, delicious, and quick to make.

Ingredients

  • 1 can cream of chicken soup
  • 1 c. small curd cottage cheese
  • 3 oz. cream cheese, room temperature
  • 1/3 c. sour cream
  • 1 t. Italian herb seasoning
  • 1/4 t. garlic powder
  • Meat from one rotisserie chicken, shredded
  • 1 c. panko bread crumbs
  • 1/2 stick butter, melted

Instructions

  1. Combine the soup, cottage cheese, cream cheese, sour cream, Italian herbs, and garlic powder in a large bowl. Add the chicken and stir to combine and coat.
  2. Turn into an 8" square baking pan treated with cooking spray.
  3. Combine the butter and panko. Sprinkle over the top of the chicken mixture and place the casserole in a preheated 350* oven. Bake for 40-45 minutes until bubbly and golden brown.
