Holiday Fruit Salad #SpringSweetsWeek

This tasty and refreshing fruit salad is the perfect addition to your Easter Brunch Table.  Fresh and canned fruits combined with cream cheese and yogurt dressing sweetened with natural honey, and flavored with warm spices and vanilla paste is a wonderful way to add some healthier sweets to your diet.

Imagine my delight in opening my sponsor gifts and finding these adorable little Crimson Gold Apples and Meyer Lemons from Melissa's Produce, Vanilla Bean Paste from Taylor & Colledge, and Cinnasational Spice Blend from Selafina.  I immediately knew I wanted to make this fruit salad that often turns up on our Holiday Brunch Buffets. 

I cored and quartered those delicious little Crimson Gold Apples and tossed them with some juice from a Meyer Lemon to keep them from browning.  Then I creamed together some cream cheese with yogurt, this amazing cinnasational spice blend, and some honey.

I had never heard of Crimson Gold Apples before receiving them as a sponsor gift.  They are small, sweet, and scrumptious.  They were perfect in this salad but if you cannot find them any sweet eating apple will work.

This salad can be made ahead of time and refrigerated until you are ready to serve it.  Any leftovers are great to use in a smoothie for breakfast the following day.  It is perfect as a side dish, as dessert over pound cake or as a light dessert all by itself.

    Fruit Salad with Cream Cheese Dressing

    Fruit Salad with Cream Cheese Dressing

    This tasty and refreshing fruit salad is the perfect addition to your Easter Brunch Table. Fresh and canned fruits combined with cream cheese and yogurt dressing sweetened with natural honey is a wonderful way to add some healthier sweets to your diet.
    Prep time: 10 MinTotal time: 10 Min

    Ingredients

    • 1 1/2 lbs Crimson Gold Apples, cored and quartered (or apples of choice)
    • 1 c. green seedless grapes, halved
    • 1 c. red seedless grapes, halved
    • 1 can (20 oz) pineapple chunks, drained
    • 1 can (12 oz) mandarin orange sections, drained
    • juice of half a lemon (I used Meyer seedless lemon)
    • 3 oz. cream cheese, room temperature
    • 1 c. low-fat plain yogurt
    • 1/2 c. honey
    • 1/4 t. cinnasational spice blend or cinnamon

    Instructions

    1. Place the apples into a large bowl. Add the lemon juice and toss to coat.
    2. Add the grapes, pineapple, and mandarins to the bowl.
    3. Place the cream cheese, yogurt, cinnamon, and honey into a food processor and puree until smooth.
    4. Pour over the fruit and toss to coat. Serve immediately or refrigerate until ready to serve.
