Welcoming 2024 on the 7th Day of Christmas with Sauerkraut with Bacon and Smoked Pork Chops

Happy 2024!!  We don't do much to ring in the New Year.  I'm a lightweight and staying up until Midnight no longer holds any appeal to me.  But we did celebrate with a "lucky" dinner of Sauerkraut with Bacon and Smoked Pork Chops.

After dinner, we enjoyed a glass of wine in the hot tub before I called it a night.  Frank does stay up until Midnight because it is tradition for him and his siblings to phone each other at midnight.  I was snoring well before that phone call LOL.

I have set a few goals for this year.  I have started a blogging challenge where I and some of the other bloggers will work our way through the alphabet posting a new recipe every other week.  This challenge starts on Wednesday with the Letter A.  Stop by and see what we all cook up.

I have also started the 365 Mile Hiking Challenge with my daughter, Amy.  We will attempt to hike 365 miles in 2024.  We are planning a 4-day hike on the AT trail and had to get prepped for it.  We thought this might be a good incentive.

Frank and I are starting an exercise program at our county senior center.  We have joined chair yoga.  I think that this will help Frank gain some flexibility especially since he is getting a steroid shot in his left hip before the class starts on January 14th.  I also think this is a good way for me to ease back into yoga since I was run over by a truck and I still suffer from dizziness and have a difficult time getting up and down from the floor.  Perhaps by this time next year, we will be ready for actual yoga classes again.

Our plans for this year include a European Trip to Germany and France. Frank is a WWII buff and we are going to the Beaches of Normandy for a tour after visiting Berlin, Nuremberg, and Dachau.  We will also have a few days in Paris.  We are hoping that between the shot and the stretching exercises, Frank's hip will be well enough for him to enjoy the tours.

Still going with the Cabbage theme, this morning I put together some Sauerkraut and put it in the slow cooker along with some slices of bacon leftover from Christmas Eve Brunch and 2 smoked pork chops.
We enjoyed them for dinner tonight to bring us luck in 2024.  This is a great meal for any time of year or day of the week.  Enjoy.....

Sauerkraut with Bacon and Smoked Pork Chops

Sauerkraut with Bacon and Smoked Pork Chops

Delicious sauerkraut and cabbage flavored with onions, apples, bacon and a hint of brown sugar topped with smoked pork chops and cooked on low in a slow cooker while you get on with your busy day.

Ingredients

  • 10 oz. refrigerated sauerkraut, rinsed and drained
  • 1/2 of a small head of cabbage, sliced
  • 4 oz. sliced mushrooms
  • 1 small onion, sliced
  • 1 T. butter
  • salt and pepper, to taste
  • 3 T. Condensed Cream of Mushroom Soup
  • 1/4 c. water
  • 1/2 of an apple, cored, peeled and diced
  • 2 t. brown sugar
  • 3-4 slices cooked bacon, diced
  • 2 smoked pork loin chops

Instructions

  1. Melt the butter in a skillet over med-high heat. Add the onions and mushrooms, season with salt and pepper and cook, stirring occasionally, until softened.
  2. Place the rinsed sauerkraut into the crock of a slow cooker. Add the onions and mushrooms, along with the soup, water, apple, brown sugar and bacon. Stir to combine.
  3. Lay the Pork Chops on top of the vegetable mixture and cook on low for about 4 hours.
  4. Remove the pork chops to a cutting board and trim off any fat, gristle and bone. Cut the Pork into bite-size pieces and return to the slow cooker. Stir to combine and serve.
