Rhubarb Mint Mojito Mocktail or Cocktail

This delicious, refreshing drink is made by making a simple syrup using rhubarb and mint.  Add some lime juice and fill the glass with soda water for a lovely, light mocktail to start off the New Year.

We celebrated Epiphany yesterday with our final gathering for this Christmas season.  We had a houseful of guests including kids and adults that chose to be alcohol-free.  I like serving up flavorful drinks that still look fancy and festive.
Christie of A Kitchen Hoor's Adventures invited us to share Mocktail recipes with our readers today. Many of us choose to lighten up in January after the excess of the Holidays.  In fact, January 14-20 is National Mocktail Week.

I had some rhubarb from my garden, that I had chopped and put up in the freezer to make this simple syrup.  You can buy frozen rhubarb at many grocers.  This recipe is easily adapted to become a cocktail should you wish.  Simply add a shot of white gin before filling the glass with soda.

Rhubarb Mint Mojito Mocktail

This delicious, refreshing drink is made by making a simple syrup using rhubarb and mint. Add some lime juice and fill the glass with soda water for a lovely, light mocktail to start off the New Year.

Ingredients

Rhubarb Simple Syrup
  • 2 c. chopped rhubarb
  • 1/2 c. sugar
  • 1/2 c. water
  • 1/2 bunch fresh mint
Mocktail or Cocktail
  • 3-4 mint leaves
  • 1 jigger rhubarb simple syrup
  • juice of half a lime
  • club soda

Instructions

Rhubarb Simple Syrup
  1. Place the mint, rhubarb, sugar and water into a small saucepan over high heat. Bring to a boil. Reduce heat to a simmer and cook for about 15 minutes, stirring occasionally.
  2. Strain through a fine mesh sieve and allow to cool completely.
Rhubarb Mint Mojito Mocktail or Cocktail
  1. Place the mint into a rock glass and use a muddler or wooden spoon to release the oils from the mint.
  2. Fill the glass with ice. Add the simple syrup and lime juice. Top with Club Soda and garnish with a lime slice or sprig of mint, if desired.
  3. If making a cocktail, add a jigger of white rum before topping with Club Soda.
