Lobster Roll Pasta Salad #SundayFunday

If you love Lobster Rolls and Pasta try this wonderful combination for your next picnic or potluck. Tender chunks of lobster and crisp bits of bacon tossed with pasta and a creamy dressing.

Lobster Pasta Salad Plate

This recipe makes a lot of Lobster Salad so it is perfect when attending a picnic potluck where it will be served at a side or for a smaller gathering as an entree served with some good bread and fresh fruit.

Lobster Roll Pasta Salad

Lobster Roll Pasta Salad

Tender chunks of lobster and crisp bits of bacon tossed with pasta and a creamy dressing.

Ingredients

  • 1 lb. bacon, diced
  • 2 sticks of butter
  • 2 large or 4 small lobster tails
  • 4 c. water
  • 1/2 lb macaroni noodles or other short pasta
  • 2 -3 stalks celery, diced
  • 1 bunch of scallions, white and light green parts, sliced
  • 3-4 tomatoes, seeded and diced
  • 1 c. Miracle Whip
  • juice of 1 large lemon
  • 4 cloves garlic, minced
  • 2 t. dried tarragon
  • salt and pepper, to taste

Instructions

  1. Cook the bacon until crisp over medium heat in a large pot or Dutch oven. Remove with a slotted spoon to a plate and set aside retaining the drippings in the pot.
  2. Reduce heat to low and add the butter to the pot. Cook until melted, scraping up any browned bits stuck to the bottom of the pan. While the butter melts, remove the lobster meat from the tails and cut it into bite-size pieces. Add the lobster to the pot and cook, stirring occasionally, until the lobster is pink and cooked through about 4-5 minutes. Remove lobster to plate with bacon, reserving the butter mixture.
  3. Add the water to the pot with the drippings and increase the heat to high. When the water boils add the pasta and cook according to package directions.
  4. While the pasta cooks, whisk together the Miracle Whip, lemon juice, tarragon, salt, and pepper in a large bowl. Stir in the celery, scallions, and tomatoes. Fold in the lobster and bacon.
  5. Drain the pasta and allow it to cool to room temperature. Fold into the ingredients in the bowl and refrigerate, covered, until ready to serve.
