Each month Nichole of Cookaholic Wife invites us to join her in an Improv Cooking Challenge.  She tells us what the challenge is and sends us off to get creative and share recipes with each other.  This month she asked us to serve up Meat and Potatoes.

Smoked Sausage and Potato Skillet

We love smoked sausage in our household and it has a long shelf life so I keep some in my refrigerator for those nights when I get home from running errands and too hungry to spend a lot of time cooking.  

You can pull out that smoked sausage and get dinner on in a snap.  Concerned about the nutrition and fat content?  No need.  Smoked sausage is often made with pork but you can also get smoked sausage made with beef, chicken or turkey.

The addition of onions and peppers to the skillet makes it a complete one pot meal.  You can add additional vegetables if you prefer.  I often add mushrooms because we love them.  I used tender little baby potatoes for this skillet but you can use any potatoes you have, cut into small dice.  I have even used frozen hash brown potatoes and if you use the O'Brien style you don't have to add the onions and peppers.

Smoke Sausage and Potato Skillet

This wonderful one pan dinner is a quick and easy way to get dinner on the table in a flash.

Ingredients

  • 1 lb. potatoes, diced
  • 1/2 sweet onion, diced
  • 1 green bell pepper, seeded and diced
  • 1 pkg. smoked sausage of choice, sliced into rounds
  • 2 T. olive oil
  • 2 t. Italian seasoning
  • 1/4 cup stock of choice
  • 2 shakes hot sauce of choice
  • salt and pepper, to taste

Instructions

  1. Heat the oil in a cast iron skillet over medium heat. Add the potatoes, season with salt and pepper and cook, stirring often, until soft and golden brown on the outside, about 10 minutes. Transfer to a plate and set aside.
  2. In same skillet add the sausage, onions and peppers. Cook and stir until sausage is browned and vegetables are tender, about 10 minutes. Return the potatoes to the skillet, season with the Italian seasoning.
  3. Add the stock and hot sauce to the skillet. Continue to cook, scraping up any browned bits stuck to the pan, and coating the sausage and vegetables until potatoes are rewarmed, about 5 minutes.
