I love serving up this casserole when I am entertaining a large gathering because it can be made ahead of time and then placed into the oven to heat when your company is there and you want to be visiting and not working in the kitchen.
It is very versatile and you can use any ingredients that you want. I chose to use red potatoes but only because I had them. Feel free to use whatever potatoes you like to mash. I used light cream in this batch but you can just use milk if you'd like. I used a 3 cheese blend but use any kind of cheese you love.
I usually mix my sour cream right in with my mashed potatoes but I forgot so I added dollops on top along with the cheese and bacon before baking. You can mix the bacon right into the potatoes as well. It's your recipe....make it your way.

Loaded Red Skin Potato Casserole

Ingredients
- 3 lbs. Redskin potatoes
- 1 stick butter, cut into cubes
- 3/4 c. light cream, plus more if needed
- 1 1/2 c. sour cream
- 2 c. Shredded 3 Cheese Blend, divide
- 12 oz. bacon, diced and cooked
- salt and pepper, to taste
Instructions
- Cook the potatoes in salted water that has been brought to a simmer until tender. 20-30 minutes depending on size of potatoes, until they are easily pierced with a fork.
- Partially mash the potatoes and then add the butter, milk, half of the shredded cheese and sour cream. Mash until potatoes are the consistency you desire, adding more cream if needed.
- Spread into a 9x13" baking pan and sprinkle with the bacon and remaining cheese.
- Bake in a preheated 350* oven for 20 minutes, until cheese is melted, if baking immediately. If refrigerating to bake later, remove from refrigerator and bring to room temperature before placing in over for 45-60 minutes.
