Salad does not need to contain lettuce. This salad is chock full of avocados, cucumbers, tomatoes and onion tossed in a light oil and vinegar dressing that is flavored with fresh herbs.
This weekend is historically the first big bbq weekend of the summer. We are given an extra day each year to pay homage to those who have died fighting for our freedom. We spend it in celebration. This seemed odd to me for many years and then I realized that we do and, in my opinion, should celebrate when those we love have died.
We celebrate their lives and contribur lives. We hold parties and gather with food to share our memories and comfort one another. As a Christian, I celebrate that this is the onset of their eternal life with God and that I will be reunited with them upon my death.
So go ahead and have that barbecue. Crack open a beer. Pour a wine. Have a cocktail. We will toast those who have died for us and celebrate the blessings that their sacrifice helped to provide.

Avocado Salad with Herb Dressing
This salad is chock full of avocados, cucumbers, tomatoes and onion tossed in a light oil and vinegar dressing that is flavored with fresh herbs.

Ingredients
- 1 English cucumber, sliced into rounds
- 1 (16 oz) pkg. grape tomatoes
- 1/2 small red onion, slivered
- 2 -3 avocados, pitted,peeled and diced
- juice of 2 lemons
- 1 1/2 T. white wine vinegar
- 1/4 c. olive oil
- 1 t. honey
- 2 cloves garlic, minced
- handful of chopped cilantro leaves
- handful of chopped parsley leaves
- salt and pepper, to taste
Instructions
- Combine the cucumber, tomatoes, onion and avocado in a serving bowl. Sprinkle with the lemon juice, salt and pepper and gently toss to coat.
- Whisk together the oil and vinegar with the garlic, cilantro, and parsley. Pour over the vegetables and again gently toss before serving.

Although I do like lettuce and other greens, this is my favorite kind of salad!
