I thought I was going to miss out on this first bake of the year as I was involved in a serious accident the day after Thanksgiving. I also thought I was going to miss out on the holidays but God is good and I was released from the hospital on December 21st.
I was still using a walker and my arm was still in a cast so most of the holiday prep and cooking was handled by my husband. Before I knew it, I was able to walk on my own and on January 4th the cast was removed from my arm.
On January 6th we were invited to Frank's sister's house for Little Christmas, the end of our holiday season. I was not only well enough to attend but I felt good enough to make this easy peasy cake so that I could join in the fun this month.
The original recipe calls for walnuts, however I omitted them as one of our family members has a nut allergy. This cake was still delicious and a huge hit.
As you read this post I am well enough to be vacationing in Hawaii. I was able to navigate the airports and the flights without a walker or cane. I still get tired easily but am gaining strength each and every day. I think 2023 is going to be a good year!!!

Apple and Calvados Cake from Normandy
This delicious cake is more of a coffee cake with chunks of apples in a tender crumb flavored with Calvados covered with a crisp outer layer.

Ingredients
- 3 eggs, room temperature
- 2 c. sugar
- 1 1/2 c. canola oil
- 1/4 c. Calvados
- 3 1/4 c. flour
- 1 t. baking soda
- 2 t. cinnamon
- pinch of salt
- 1/8 t. ground cloves
- 3 Granny Smith apples, peeled, cored and diced
Instructions
- In large bowl of stand mixer, fitted with the whisk attachment, combine the eggs and sugar. Turn mixer to low and add the oil in a thin stream until incorporated. Stir in the Calvados.
- Turn off mixer, add the flour, baking soda, salt, cinnamon and cloves. Turn the mixer to low and whisk until incorporated.
- Fold in the apples and spread the batter into a 9" Springform pan that has been treated with baking spray.
- Bake in a preheated 350* oven for 75-90 minutes, until golden brown and a skewer inserted into the center removes cleanly.
