While researching, I found this recipe for Welsh Onion Cake over at Just a Pinch. We are in the middle of a kitchen remodel and I am working with limited room and capabilities. This recipe was simple enough that it was doable working in my dining room and using my smart oven for the potatoes as a side dish for the steaks that I was grilling for dinner.
I adapted the recipe to make two individual casseroles instead of making a large casserole. The recipe calls for caerphilly cheese but states you can substitute cheddar. I had cheddar on hand so that is what I used.
This is a wonderful, simple recipe containing only 4 ingredients and seasoned with just salt and pepper. This is a good thing especially when all your spices are buried underneath everything else that was removed from the kitchen.
This week's menu still reflects the fact that I have no kitchen. I am very grateful for the amazing weather we have been having that allows a lot of outdoor cooking.

Teison Nionod (Welsh Onion Cake)

Ingredients
- 4-6 small creamer potatoes, enough for 2 servings, depending on size
- 2 T. butter, 1 T. cold, 1 at room temperature
- 1/2 small onion, diced
- salt and pepper, to taste
- 2 oz. cheddar cheese, shredded
Instructions
- Use the room temperature butter to grease the bottom and sides of two individual casseroles. I used souffle dishes.
- Thinly slice the potatoes. Place a layer onto the bottom of each casserole. Sprinkle wth 1/4 of the onion and season with salt and pepper.
- Sprinkle wth 1/4 of the cheese.
- Repeat these layers and then top with the cold butter that has been cut into small dice.
- Cover with aluminum foil and bake in a preheated 350* oven for 30-45 minutes, until fork tender. Uncover and bake another 10-15 minutes, until lightly browned.
