This salad is great for those nights when you don't feel like spending much time preparing a dinner but still want something delicious and nutritious. This dish is great as a light dinner but can also be used as a side dish that you can be proud to take to an end of the summer potluck.
Simply toss your shrimp, green beans and grape tomatoes with some olive oil, salt and pepper and place them into a grill pan over med high heat, tossing and turning until shrimp is pink, tomatoes are softened and beans are crisp tender.
Combine the shrimp and vegetables with cheese tortellini that has been cooked per package directions.
Add a desired amount of Sweet Italian Dressing and toss to coat. This can be served warm, room temperature or cold. It is delicious whatever temperature you choose. I use Marzetti Sweet Italian Dressing. They did not sponsor this post, I just think that their Sweet Italian Dressing is the best. If you haven't tried it, please do and let me know if you agree.
Easy meals are always welcome, especially when you find yourself very busy as I am right at the moment. Today will be spent in the kitchen getting ready for our family reunion that is going to be held at a hall tomorrow and then continue at our house on Sunday.
We are having the reunion catered, however I am also making up a roaster of Stuffed Cabbages and Roz is making up Kielbasa and Sauerkraut to add to the buffet. We both will be using Mom Klik's recipes for these dishes.
I am also smoking a brisket today. This will be turned into BBQ Beef for sandwiches tomorrow as out of town guests gather at our house before heading home after the weekend.
Tuesday is my birthday and Wednesday we are heading to a cottage that we have rented for a week. On Thursday we will be going to a The Farm Restaurant near the cottage. I have been wanting to try this restaurant for year.

Tortellini Salad with Grilled Shrimp, Tomatoes and Green Beans

Ingredients
- 1 (20 oz) package refrigerated cheese tortellini, cooked per package directions
- 1 lb. raw shrimp, peeled, deveined, tails removed
- 1 pint grape tomatoes
- couple of handfuls fresh green beans, trimmed
- 2 T. olive oil
- Salt and Pepper, to taste
- 1 bottle or jar of your favorite Sweet Italian Dressing (I used Marzetti's)
Instructions
- Toss the shrimp, tomatoes and green beans with the olive oil, salt and pepper. Pour into a grill pan and place onto a hot grill. Cook, tossing and turning, until shrimp is pink, tomatoes are softened and beans are crisp tender. Remove from grill.
- Place the cooked tortellini into a large bowl. Add the shrimp and vegetables.
- Pour on a desired amount of dressing, I used about 1/2 of the jar, and toss the ingredients to coat and combine.
