I don't know about you but in our household August and September mean Zucchini. Luckily it can be used in so many different recipes from savory to sweet and when you just can't look at it anymore it can be shredded and frozen so you can take it out when doing your holiday baking.

Lemon Zucchini Muffins

Ingredients
- 1 c. white whole wheat flour
- 1/4 + 1/8 t. baking powder
- 1/4 t. baking soday
- pinch of salt
- 1 egg
- 1/2 c. sugar
- 1/4 c. sour cream
- 1/4 c. canola oil
- juice of 1/2 lemon
- 1 c. shredded zucchini
Instructions
- Whisk together the flour, baking powder, baking soda and salt in a large bowl.
- Whisk together the egg, surgar, sour cream, oil, lemon juice in a small bowl or measuring cup.
- Make a well in the dry ingredients and pour the egg mixture into it. Stir until just combined and moistened.
- Fold in the zucchini.
- Divide the batter between 6 muffin cups that have been treated with baking spray.
- Bake in a preheated 350* oven for 20 minutes, until a skewer inserted removes cleanly.
