This is the first time I have ever made or eaten a Sweet Potato Pie....Well, as far as I know.....It tastes just like a pumpkin pie, my very favorite pie, so perhaps I have had it unknowingly.  I wish I had known this a couple of years ago when COVID first hit and the stores were out of everything including pumpkin.

Beef Roast on a Spit and the Weekly Menu #LitHappens

Cooking this New York Strip Roast on the rotisserie creates an amazing crust on the outside.  Place a pan of root vegetables underneath the roast as it cooks and all those delicious drippings flavor your vegetables and gives you an amazing dinner without much hands on work.

Mock Turtle Soup #CooktheBooks

Mock turtle soup is made not from turtle but from beef.  It was created in the 18th century in England as an imitation of Green Turtle soup.  It is the strangest soup I have ever made, containing cookies and hard boiled eggs, and it was surprisingly tasty.
