Triple Berry Banana Bread #BreadBakers

This delicious banana bread chock full of three different kinds of berries does double duty served as dessert one night and breakfast the following morning.

Triple Berry Banana Bread

I love banana bread and it is a good thing because every week I buy a bunch of bananas.  3 or 4 get eaten and the others stay on my counter until they over ripen at which point they get popped into my freezer.  I'm not complaining.....this simply means that anytime I get a hankering for a sweet treat, I can pull out a few and bake up some quick bread or muffins.

I have been known to add some swirls of Nutella to my bread.....so good!!  I've also made PBJ Banana Bread, Pumpkin Banana Bread , and Old Fashioned Banana Bread.  

If you prefer your bread in muffin form try these with Craisins and Streusel, Maple Syrup or Rhubarb.
I realized as I looked through my recipes that I have never shared my Chocolate Banana Muffins.  That is going to change in an upcoming Muffin Monday.

Banana Bread Sundae

All of these breads and muffins are delicious but this Triple Berry Loaf is AHHHHHmazing!!!  Especially when I decided to add a scoop of ice cream and some hot fudge sauce to serve as dessert when our friend, Peter, came to visit.

You can use any berries you like in this bread.  I used raspberries, blackberries and strawberries because that's what I had in the refrigerator.  

I hadn't planned on having this for dessert but when I was trying to think of what I should name this bread the first thought that came to mind was Banana Split which made me believe, and rightly so, that this would make a delicious base for a sundae.

Triple Berry Banana Bread

This delicious banana bread chock full of three different kinds of berries does double duty served as dessert one night and breakfast the following morning.

Ingredients

  • 2 c. flour
  • 3/4 c. sugar
  • 1 t. baking soda
  • pinch of salt
  • 3 over ripe bananas
  • 1/4 c. buttermilk
  • 2 eggs
  • 1/4 c. canola oil
  • 1 t. vanilla paste
  • 1 c. mixed berries, cut to uniform size, I used raspberries, blackberries and strawberries

Instructions

  1. Combine the flour, sugar, baking soda and salt. Set aside.
  2. Whisk together the bananas, buttermilk, eggs, oil and vanilla.
  3. Pour the dry ingredients into the banana mixture and stir until just incorporated and moistened. Fold in the berries.
  4. Place into a loaf pan that has been treated with baking spray and bake in a preheated 350* oven for 50-60 minutes, until a skewer inserted in the center removes cleanly.
  5. Let cool in baking pan on wire rack for 15 minutes before turning the bread out onto the rack to cool completely.

  1. I can see we were thinking somewhere along the same lines, Wendy! If you put enough good stuff in banana bread, it really does make an excellent dessert. I love your triple berry version!
