These sweet, nutty treats were served up as part of an appetizer buffet along with the mini quiche that I shared with you yesterday.
My friend, Rose, served these little bundles of goodness up at a brunch that she hosted after we attended a Mass for our mutual friend, Kirsten, on the year anniversary of her death. She had tons of comfort food for all of us who so loved Kirs and miss her so terribly.
My husband really loved these pigs in the blanket and requested her recipe so that I could make them for him. I was happy to do so and served them up at a Memorial Day gathering we hosted. They were a huge hit.
I have gotten into the habit of listening to audio books each day as I go on my walks. Christmas at the Restaurant is the second in a series by Pamela Kelley. I have not reviewed the first in the series which is titled, simply, The Restaurant.
These books, about 3 sisters, Mandy, Jill and Emma, unexpectedly inherit a restaurant from their grandmother. Of course, there is a catch and they must all spend one year living together and running the restaurant with the Executive Chef, before selling.
These books are like watching a Hallmark Mini-Series. I'm a sucker for those too. Tons of drama, tons of laughs, tons of food and tons of happy endings. Perfect for starting each morning as I walked.
I listened to these books, narrated by the author, back to back and I'm choosing to review the second book first because in this book one of the protagonists, Mandy, made pigs in the blanket with her children as an appetizer for Christmas Eve. This recipe was perfect for a segue into the book review.
Yield: 24 sausage rolls
Sweet Sausage Rolls
In a twist on the classic pigs in the blanket these little bite size goodies are baked in a buttery, sweet and nutty sauce.
Prep time: 10 MinCook time: 20 MinTotal time: 30 Min
Ingredients
- 1 pkg. refrigerated crescent dough
- 24 cocktail sized smoked sausages
- 3/4 c. melted butter
- 3/4 c. chopped pecans
- 4 T. honey
- 5 T. brown sugar
Instructions
- Combine the butter, nuts, honey and sugar. Spread into a 9x13" baking pan that has been treated with cooking spray.
- Unroll the dough and separate into triangles. Cut each triangle, lengthwise, into three more triangles.
- Place a sausage onto the wider end of a triangle and roll up tightly.
- Place into the butter mixture, seam side down.
- Bake in a preheated 400* oven for 15-20 minutes, until golden brown.
