Baby Babkas #BreadBakers

These little baby babkas are like individual chocolate cinnamon rolls.  So good.  You can add a cream cheese icing for an even closer resemblence to cinnamon rolls but I enjoyed them just as they were.

This recipe starts with an orange kissed, buttery,  yeast dough that is then spread with a chocolate filling flavored with cinnamon.

Chocolate Babka

Roll it up, cut it into 12 individual portions and place each into a muffin cup for a second rise.  After the second rise sprinkle with streusel and bake.

This recipe is not difficult but it does have a lot of steps and does take some time.  I think the end result is worth the effort and I hope you do too.

Chocolate Baby Babkas

These little baby babkas are like individual chocolate cinnamon rolls. So good. You can add a cream cheese icing for an even closer resemblence to cinnamon rolls but I enjoyed them just as they were. They are perfect for breakfast with a cup of coffee and just as suited as a dessert.

Ingredients

Dough
  • 2 c. flour
  • 2 t. active dry yeast
  • 1/4 c. sugar
  • zest of 1 orange
  • pinch of salt
  • 1 egg + 1 egg yolk
  • 1/3 c. warm milk (105-110*)
  • 5 T. butter, room temperature, diced
Filling
  • 1/2 c. semi sweet chocolate chips
  • 1/2 stick butter
  • 2 T. sugar
  • 2 T. brown sugar
  • 2 T. cocoa powder
  • pinch of salt
  • 1/2 t. cinnamon
Streusel
  • 2 T. flour
  • 1 T. sugar
  • 1 T. brown sugar
  • 1/2 t. cinnamon
  • pinch of salt
  • 1 T. butter

Instructions

Dough
  1. Whisk together the four, yeast, sugar and zest in the large bowl of a stand mixer, fitted with the dough hook.
  2. Add the salt, egg, egg yolk and milk..
  3. Turn speed to low and mix until combined. Scrape down the bowl and mix again. Add the butter, a little at a time, mixing after each addition until well incorporated.
  4. Turn speed to medium and knead for about 10 minutes, until dough forms a ball that is smooth and elastic. Add more flour, 1 Tablespoon at a time, if needed.
  5. Form the dough into a ball, spray the bowl with cooking spray and return the ball to the bowl.
  6. Cover with a damp towel and let rise for 2-3 hrs, until doubled in size.
Chocolate Filling
  1. Place the chocolate chips and butter into a small pan over medium heat. Cook, stirring occasionally, until melted and smooth.
  2. Stir in the sugar, brown sugar, cocoa powder, cinnamon and salt. Set aside to cool.
Streusel
  1. Place the flour, sugar, brown sugar, salt and cinnamon in the bowl of a food processor.
  2. Add the butter and pulse until crumbs are formed. Set aside.
Assembly
  1. Form the dough into a rectangle, place onto a piece of parchment and roll to 8x18" with the long side closest to you.
  2. Spread the chocolate over the dough as close to the edges as possible.
  3. Starting with the side closest to you and using the parchment to assist, roll the dough up like a log. Pinch the seam to seal and place seam side down.
  4. Use a serrated knife to cut into 12 equal portions.
  5. Place each portion into a muffin cup that has been treated with baking spray.
  6. Cover with a warm, damp towel and let rise for about 2 hours.
  7. Sprinkle with streusel and bake in a preheated 350* oven for 20 minutes, until top is browned and an internal temperature of 190* is reached.
  8. Move to a cooling rack and allow to cool in pan for 15-20 minutes before removing and cooling completely on a wire rack.
