These little baby babkas are like individual chocolate cinnamon rolls. So good. You can add a cream cheese icing for an even closer resemblence to cinnamon rolls but I enjoyed them just as they were.

Roll it up, cut it into 12 individual portions and place each into a muffin cup for a second rise. After the second rise sprinkle with streusel and bake.
This recipe is not difficult but it does have a lot of steps and does take some time. I think the end result is worth the effort and I hope you do too.

Chocolate Baby Babkas
These little baby babkas are like individual chocolate cinnamon rolls. So good. You can add a cream cheese icing for an even closer resemblence to cinnamon rolls but I enjoyed them just as they were. They are perfect for breakfast with a cup of coffee and just as suited as a dessert.

Ingredients
Dough
- 2 c. flour
- 2 t. active dry yeast
- 1/4 c. sugar
- zest of 1 orange
- pinch of salt
- 1 egg + 1 egg yolk
- 1/3 c. warm milk (105-110*)
- 5 T. butter, room temperature, diced
Filling
- 1/2 c. semi sweet chocolate chips
- 1/2 stick butter
- 2 T. sugar
- 2 T. brown sugar
- 2 T. cocoa powder
- pinch of salt
- 1/2 t. cinnamon
Streusel
- 2 T. flour
- 1 T. sugar
- 1 T. brown sugar
- 1/2 t. cinnamon
- pinch of salt
- 1 T. butter
Instructions
Dough
- Whisk together the four, yeast, sugar and zest in the large bowl of a stand mixer, fitted with the dough hook.
- Add the salt, egg, egg yolk and milk..
- Turn speed to low and mix until combined. Scrape down the bowl and mix again. Add the butter, a little at a time, mixing after each addition until well incorporated.
- Turn speed to medium and knead for about 10 minutes, until dough forms a ball that is smooth and elastic. Add more flour, 1 Tablespoon at a time, if needed.
- Form the dough into a ball, spray the bowl with cooking spray and return the ball to the bowl.
- Cover with a damp towel and let rise for 2-3 hrs, until doubled in size.
Chocolate Filling
- Place the chocolate chips and butter into a small pan over medium heat. Cook, stirring occasionally, until melted and smooth.
- Stir in the sugar, brown sugar, cocoa powder, cinnamon and salt. Set aside to cool.
Streusel
- Place the flour, sugar, brown sugar, salt and cinnamon in the bowl of a food processor.
- Add the butter and pulse until crumbs are formed. Set aside.
Assembly
- Form the dough into a rectangle, place onto a piece of parchment and roll to 8x18" with the long side closest to you.
- Spread the chocolate over the dough as close to the edges as possible.
- Starting with the side closest to you and using the parchment to assist, roll the dough up like a log. Pinch the seam to seal and place seam side down.
- Use a serrated knife to cut into 12 equal portions.
- Place each portion into a muffin cup that has been treated with baking spray.
- Cover with a warm, damp towel and let rise for about 2 hours.
- Sprinkle with streusel and bake in a preheated 350* oven for 20 minutes, until top is browned and an internal temperature of 190* is reached.
- Move to a cooling rack and allow to cool in pan for 15-20 minutes before removing and cooling completely on a wire rack.
