Our Bread Bakers group meets on the second Tuesday of each month and shares a bread based on a theme or ingredient chosen by one of the members.  This month my friend Sneha of Sneha's Recipe asked us to join her in baking No Knead breads.

May is normally a pretty busy month for me but this year it was even crazier as I was getting ready to go on vacation.  In fact, as you are reading this post I am soaking up the sun or enjoying life under the sea in Cabo San Lucas.

So, I decided to lighten my load a bit and combine these two events.  Off I went to Turkey, virtually unfortunately, to explore the no knead breads that they enjoy.  There were quite a few of them but I ended up choosing this recipe from Unicorns in the Kitchen.  I am so glad I did and you will be too.

Pide Ekmek (Turkish Flatbread)

This Turkish Flatbread is light, airy and fluffy. No kneading required and with only 2 short rising periods it is a quick and delicious bread that your family will love.

Ingredients

  • 1/2 c. milk
  • 1/2 c. water
  • 1 1/2 T. olive oil
  • pinch of sugar
  • pinch of salt
  • 1 1/8 t. instant dry yeast
  • 1 egg, white and yolk divided
  • 2 - 2 1/2 c. flour
  • 1/2 T. sour cream (or plain yogurt)
  • 1/2 T. water
  • Sesame Seeds for sprinkling

Instructions

  1. Combine the water and milk in a microwave safe measuring cup and heat to 105-110*. Once heated place into the bowl of a stand mixer fitted with the paddle attachment, along with the oil, sugar, salt, yeast and egg white. Mix to combine.
  2. With the mixer on low speed, gradually add the flour until the dough comes together and pulls away from the sides of the bowl.
  3. Cover the bowl with a warm damp towel and let rise for 30 minutes.
  4. Transfer the dough to a floured surface and shape into a boule. Place onto a baking sheet lined with parchmment or a silicone mat and allow to rise for another 20 minutes.
  5. Using your fingers make indentations in the bread about 1" from the edge, forming a circle. Then use your fingers to make indentations in different directions forming diamond shapes.
  6. Whisk together the egg yolk, sour cream, and water. Brush over the top of the bread and sprinkle with sesame seeds.
  7. Place a pan of water on the bottom rack of a preheated 400* oven and place the baking pan with the bread on the middle rack of the oven. Bake for 15-20 minutes, until golden brown.
  8. Remove from oven and cover with a clean, damp, linen towel trapping the steam and creating a soft, fluffy bread. Serve warm.
