Besides bad puns, my mind also drifts towards music....all.the.time! Regardless of what I am saying or what someone is saying to me....I break out in song. So everytime I say the words Raspberry Parfait it is to the tune of Raspberry Beret by Prince....or the artist formally known as Prince....or just some symbols I can't pronounce....or is he back to Prince again?
Tomorrow is the last Day of Christmas. Normally we would be celebrating with a dinner gathering and small gift exchange with family and friends but we are still in quarantine here, so it's going to be just a quiet dinner and no gifts because I couldn't go out shopping.

Raspberry Parfait
Fresh Raspberries nestled in a cloud of Cream Cheese and Whipped Cream.
Prep time: 10 MinTotal time: 10 Min
Ingredients
- 4 oz. cream cheese, room temperature
- 2 T. Amaretto
- 1/2 c. sugar
- 1/2 c. heavy cream
- Clamshell of Raspberries
Instructions
- Cream together the cream cheese, Amaretto and sugar until smooth. Add the heavy cream and beat until light and fluffy.
- Place some raspberries into the bottom of a dessert cup. Top with 1/6 of the cream mixture and sprinkle with more raspberries. Refrigerate for at least an hour before serving.
