Patricia of Pat y Co Candybar is hosting this month and invited us to pay tribute to each other by baking a cake that was made by another in a previous event.
I chose this lovely cake made by Radha of Magical Ingredients. It appealed to me because my husband has fond memories of a honey babka that his Grandmother used to make and I thought it would be a nice cake to take to our daughter Nicole's Christmas Brunch this Sunday.
Radha's recipe called for a jam glaze but no flavor was specified. Our son, Tony, makes jams for Tony's Sweet Eats and had given us a jar marked "experimental". Ingredients were peaches, white nectarines, ginger and cinnamon. I thought they would go well with the honey cake and used it for the glaze. I omitted the coconut as the jam was chunky.
I can't tell you how this cake tastes as it went into the freezer to be taken out for the brunch. I can tell you that it smelled delicious and you can see how beautiful it looks.

Magical Ingredients Honey Cake
Light cake soaked with honey and topped with a peach jam and honey glaze. This cake is a beautiful centerpiece for your brunch table.

Ingredients
- 3 1/3 c. flour
- 3 c. + 2T. milk
- 1 1/2 sticks butter, room temperature
- 1 1/2 c. sugar
- 3 t. bakings powder
- 1 1/2 t. baking soda
- 3 T. apple cider vinegar
- pinch of salt
- 2 t. vanilla
- 3/4 c. warm water
- 3/4 c. honey
- 1 c. jam of choice, I used a peach jam
Instructions
- In large bowl of stand mixer, fitted with the paddle attachment, cream the butter and sugar until light and fluffy. Stir in the milk and vanilla. Turn the speed to low and add the flour, baking soda, salt and baking powder, when incorporated increase the speed and beat well. Stir in the apple cider vinegar.
- Turn into a bundt pan that has been liberally treated with baking spray and bake in a preheated oven for 40-50 minutes, until a skewer inserted removes cleanly.
- Combine the warm water with the honey. Place 1/3 cup of this mixture into a sauce pan with the jam and cook over med heat until melted and combined. Set aside.
- When cake is done baking, place onto a cooling rack while still in pan and poke all over with the testing skewer. Pour the remaining honey/water mixture over the cake allowing it to soak in.
- After about 20 minutes, invert pan onto a cake plate and release the cake. Allow to cool and then spoon the honey/jam mixture over the cake to serve.
