I was inspired to make this frittata while reading The Gathering Table by Kathryn Springer.......
Jessica Simpson is a personal chef with skeletons in her closet that she thought she had closed the door to years ago. Working for a high powered woman of the rich and famous she is a quasi celebrity by association and great food and service, when suddenly, through no fault of her own she is immediately and summarily dismissed.
None of the other members of the rich and famous group will take a chance on upsetting her former employer and Jessica is left with no job, no home and no family or friends to whom she can turn. She happens upon an ad for a cook/housekeeping position in the small town of Winsome Lake. She applies and is accepted, sight unseen with a five year gap in her resume.
When she arrives at her new station she is met by several of the neighbors and is advised that her employer is in rehabilitation recovering from a stroke. Jessica is not sure what this means for her but having no other options, and being told that the employer (who we learn has skeletons of her own) wishes her to stay, remains in the position for what she believes is the time being.
She quickly learns that living in a small, Christian community is very different from the lifestyle she had growing up or that she had known employed by the elite. This is a charming story. The narrator's voice is a little harsh, but as I got into the storyline, that bothered me less than at first.
It is a perfect, feel good read that has not one bad guy in the whole story making it a refreshing change after the last few books I have listened to as good as they were.
The first thing that Jessica cooks after arrival is a frittata using whatever odds and ends were left available at the house that was vacant for a while before her arrival.
This is a novel about love, acceptance and forgiveness of self and of others. Perfect for this time of the year.

Roasted Butternut Squash Frittata

Ingredients
- 1 t. olive oil
- 1 sliver red onion, diced
- 1/2 small clove garlic, minced
- 2 eggs
- 1 T. milk
- 1/4 c. roasted butternut squash, diced
- 1 T. shredded mozzarella cheese
- salt and pepper, to taste
Instructions
- Heat the olive oil over medium heat in a small oven safe skillet. Add the onions and garlic and cook for a minute. Add the butternut squash and give a quick stir. Remove from heat.
- Whisk together the eggs with the milk and season with salt and pepper. Pour over the vegetables and sprinkle with the cheese.
- Place into a preheated 400* oven and bake until set and puffy, about 10 minutes. Serve immediately.
