This is my final cookie that I'm sharing for Christmas Cookie Week but, fret not, there are plenty more cookies to be baked and shared between now and Christmas day.........

Peppermint Shortbread dough

I think that these are a very elegant cookie and I love that I can make the dough and have it in the refrigerator to bake up as needed.  The recipe makes 2 dozen which, I find, is the perfect amount to have on hand. When those are baked up and eaten, it takes only minutes to make a second batch to have in the fridge for when freinds or family pop in and you want to make them feel welcome.

I got this recipe, last year, from my friend Sister MaryAnn who had cut it out of a local newspaper.  I knew that meant that she was hoping I would bake some up and share with her.  I never found the time last year but I did make sure that it was on my list of cookies to bake for this year.

I took them over to her yesterday, along with some of my Chocolate Peanut Butter Blossoms.  The Molasses Cookies have seem to disappeared and need to be made again.  She was very pleased and it warmed my heart to have kicked off the holiday season doing something nice for someone I love.

Peppermint Shortbread

Peppermint Shortbread

These amazing slice and bake cookies need only 5 ingredients and taste exactly like Christmas with melt in your mouth goodness.

Ingredients

  • 2 sticks butter, room temperature
  • 3/4 c. powdered sugar
  • 1 t. vanilla paste
  • 1 t. salt
  • 2 1/3 c. flour
  • 3/4 c. peppermint crunch baking chips

Instructions

  1. In large bowl of stand mixer, fitted with the paddle attachment, cream the butter, sugar, vanilla and salt until smooth.
  2. With mixer on low speed, gradually add the flour until combined. Stir in the peppermint chips.
  3. Place the dough onto a piece of plastic wrap and shape into a 12" log and place in the refrigerator overnight or in the freezer for 15 minutes.
  4. When ready to bake, slice the log into 24 equal slices (approx. 1/2" thick and place onto 2 baking sheets that have been covered with parchment or a silicone mat.
  5. Bake in a preheated 350* oven for 15 minutes, until cookies are set and the bottom is a light golden brown.
  6. Cool on a wire rack.
