This wonderful side dish is ready in less than 20 minutes but if you are like me and want them even quicker when getting dinner on the table, you can cook the brussels sprouts ahead of time and then quickly rewarm and add the finishing touches right before serving.

Brussels Sprouts with Smoked Almonds and Manchego Cheese
These Brussels Sprouts get a wonderful smoky flavor and crunch from the almonds, some brightness from the vinegar, and decadence from the cheese. It is the perfect Holiday Side Dish.
Prep time: 10 MinCook time: 15 MinTotal time: 25 Min
Ingredients
- 1. T. olive oil(
- 1 lb. Brussels Sprouts, trimmed and halved or quartered if large
- 3 cloves garlic, minced
- 2 t. brown sugar
- 1 t. paprika
- pinch of salt
- 3 T. apple cider vinegar
- 1 (1.5 oz) pkg. smoked, salted almonds, coarsely chopped
- 1/4 c. grated Manchego cheese
Instructions
- Heat the olive oil in a large skillet over medium high heat. Add the Brussels Sprouts and cook, stirring frequently, for about 15 minutes, until browned.
- Stir in the garlic, sugar, paprika and salt. Cook, stirring for a minute longer.
- Remove from heat and stir in the vinegar and almonds. Place into a serving bowl and top with the cheese.

I haven't heard of that cheese before. I will have to get some to try it with Brussels Sprouts (one of my favorite veggies)
ReplyDeleteIt is a wonderful hard cheese from Spain. Great for cheese boards as well as casseroles where you want a smokey, melty cheese.
