Spaghetti cacio e pepe #SundayFunday

Cacio e pepe translates to cheese and pepper.  This easy, tasty pasta dish is perfect for busy nights when you walk in the door with the hangries and need to get dinner on the table fast.

When I was researching Roman recipes, Cacio e Pepe popped up as a traditional Roman Food.  We've eaten this all our lives but we just called it buttered noodles LOL.  Whatever you call them they are pure, delicious comfort food that is ready in as long as it takes to cook the pasta.

Spaghetti Cacio e Pepe

Spaghetti Cacio e Pepe

Cracked fresh pepper toasted in butter and then tossed with pasta and cheese for a comforting, delicious and quick dinner.
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min

Ingredients

  • 1/2 lb spaghetti noodles
  • kosher salt
  • 6 T. butter, room temperature
  • Freshly cracked peppercorns
  • 1 1/4 c. grated parmesan cheese
  • shredded parmesan cheese for sprinkling

Instructions

  1. Fill a large pot with water and add a liberal amount of salt to the water.  Bring to a boil, add the pasta and cook per package directions.  Drain, reserving 1 cup of the cooking water.
  2. During the last few minutes of cooking time for the pasta, melt half of the butter in a large skillet over medium heat.  Add the pepper and cook, stirring and swirling, until toasted. Add the pasta water and reduce heat to low.  
  3. Add the pasta, remaining butter and cheese.  Toss with tongs until the cheese is melted and the sauce thickens. Divide between 4 bowls and sprinkle with additional cheese.

  3. I've always wanted to try this. They featured it in Stanley Tucci's series on Italian food and it sounds delicious. I bet it's even better with the fancy name too!

  5. As they say same pinch Wendy. I'd tried making this delicious dish before but it turned out a disaster. This time round, came out perfect. Quick and unbelievably delicious.
