When I was researching Roman recipes, Cacio e Pepe popped up as a traditional Roman Food. We've eaten this all our lives but we just called it buttered noodles LOL. Whatever you call them they are pure, delicious comfort food that is ready in as long as it takes to cook the pasta.

- Freshly cracked peppercorns

Instructions
- Fill a large pot with water and add a liberal amount of salt to the water. Bring to a boil, add the pasta and cook per package directions. Drain, reserving 1 cup of the cooking water.
