Scottish Smoked Salmon Pate paired with Midwestern Wines #WinePW #EattheWorld

This Smoked Salmon Pate contains only 4 ingredients and that includes the lemon juice.  Smooth, rich and decadent it is the perfect appetizer to set out with some crackers or bagel chips and enjoy with a glass of wine before dinner or just as a snack.

    Charcuterie Tray with Wine

    I use my recipe as part of a Charcuterie tray that I had taken to a Fish Fry at John's house on June 22nd in honor of Kirsten's Birthday.  I didn't realize that smoked salmon was a very common and popular dish in Scotland.  I have made a Smoked Salmon Mousse before but it was different from this version I am sharing today.

This version takes only 4 ingredients and does not use cream cheese but instead has you whip up heavy cream to mix with the smoked salmon.  You want to use a dry smoked salmon for this recipe and you mix that salmon with a whole stick of melted butter.  This is a very rich and decadent spread.

I wanted to have wine to serve with the platter and since Jill of L'Occasion is hosting our Wine Pairing Weekend this month and asked us to showcase the wines of Midwest USA, I decided to pick up some local wines from our home state of Michigan.

We have many wineries in Michigan and they are getting bigger and better all the time.  We make some award winning wines and I was happy to showcase a couple of our wineries for this event.  

Lelanau Cellars 1974

This photo from Leelanau Wine Cellars website shows their first store that was opened in 1974 by the Jacobson family. They were one of the first families to decide to grow grapes in this area that was filled with cherry farms.

Today they distribute 200,000 cases a year and are found in retails stores and restaurants throughout Michigan and surrounding states.

Bottle of Wine

I opened a bottle of their Summer Sunset to pair with this Salmon Pate.  The Summer Sunset is a beautiful Rose that is marketed as semi dry.  It is a little sweet for my liking but paired nicely with the Charcuterie and was a big hit with those guests who enjoy a sweeter wine.

Bowers Harbor Vineyards

The second bottle I brought with me to serve with the Charcuterie was from Bowers Harbor Vineyards.  Both of these wineries are in northwest Michigan.  Leelanau Cellars is on the Leelanau Peninsula while Bowers Harbor is on Old Mission Peninsula.

While this map shows the wineries on Old Mission Peninsula including Bowers Harbor.  Bowers Harbor Winery was established in 1991 on what was once a horse farm.  It now grows over 20 acres of grapes.  

I opened a bottle of 2020 Pinot Grigio from this winery.  It is crisp, bright and dry.  Michigan makes some lovely white wines and this bottle was very pleasant and paired well with the richness of the smoked salmon pate.

Scottish Smoked Salmon Pate

This Smoked Salmon Pate contains only 4 ingredients and that includes the lemon juice. Smooth, rich and decadent it is the perfect appetizer to set out with some crackers or bagel chips and enjoy with a glass of wine before dinner or just as a snack.

Ingredients

  • 1 stick butter, melted and cooled
  • 8 oz. dry smoked salmon, skin removed
  • 1/2 c. heavy cream, lightly whipped
  • juice of 1/4 lemon
  • salt and pepper, to taste

Instructions

  1. Break the skinned salmon into smaller chunks and place into a food processor.  Turn on the processor and while running, drizzle the melted butter into the bowl and mix until smooth. 
  2. Remove and place into a bowl.  Stir in the lemon juice and fold in the whipped cream.  Taste and season with salt and pepper, as needed.
  3. Place into a small bowl, cover and refrigerate for at least half an hour before serving.

  5. Double duty post. Genius. I still can't believe that I totally blitzed on writing my Eat the World post. I have done my dish weeks ago. Oh, well...I clearly have too many balls in the air. Can't wait to try this soon.

  7. This salmon pate sounds amazing, especially with using cream versus cream cheese. I haven't explored Michigan wines much, but what a great reason to come to Michigan!

    1. Should you decide to hop in that motorhome and visit our lovely state please let me know. There is a very nice State Park a few miles from my home or you can just spend some time in my driveway and join us for dinner.
