I made this sauce to serve up on spaghetti that we enjoyed with a bottle of Lambrusco for our Italian FWT group. I only used 2 Italian Sausages in my batch because I was only feeding 2 of us for dinner that night.
The sausage was all gone after the first night but that lovely sauce flavored with the sausage went into the refrigerator. I used it to top some store bought gnocchi for a second dinner and it was just as good, maybe better, than the first time we enjoyed it. I find that tomato based sauces are often better the second or third day. How about you?

Slow Cooker Italian Sausage Tomato Sauce
This delicious Italian Sausage Tomato Sauce is easily made in the slow cooker and was delicious served over spaghetti for dinner one evening. Ingredients
- 1 T. olive oil
- 1/2 red onion, diced
- 1 red bell pepper, seeded and diced
- 2 cloves garlic, minced
- 1 bay leaf
- pinch of crushed red pepper
- 1 1/2 t. dried Italian Herbs
- salt and pepper, to taste
- 1 qt. whole tomatoes with juice
- 1 (15 oz) can tomato sauce
- 1 T. tomato paste
- 1 t. sugar
- 5-6 basil leaves, chopped
- 4 Italian sausage links
Instructions
- Heat the oil in a skillet over med high heat. Add the sausage and brown on all sides. Remove to a cutting board and divide each sausage into thirds. In the same skillet, cook the onions, pepper and garlic for a few minutes until onion is softened. Transfer to the crock of a slow cooker. Add the tomatoes to the crock, crushing with your hands or the back of a wooden spoon. Stir in the tomato sauce and tomato paste along with the bay leaf, crushed red pepper flakes, salt, pepper, Italian herbs and sugar. Add the Italian Sausage, cover and cook on low for 8 hrs.
- An hour before you are going to serve, add the chopped basil to the sauce and continue to cook on low. When ready to serve remove the bay leaf, taste and season with additional salt and pepper, if needed. Serve over choice of pasta.

I agree with you about tomato based sauces. I can think of so many ways to enjoy this sauce.
