It sure looks beautiful. I was anxious to learn about it and discover the foods they enjoy........

I found a blog called International Cuisine written by Darlene who is cooking a meal from every country in the world. In this article, Darlene did all the research for me and shared not only facts about the area but also a complete menu of foods from the area starting with starters and ending with dessert.
I decided to go with the dessert, a fried Cinnamon Roll studded with raisins called Makoenva. You start with a yeast dough that you knead just until it's no longer sticky. Let it rise for about an hour and then pull off pieces, roughly roll them in your hand and fry in hot oil. While still hot shake them in cinnamon sugar and enjoy warm or at room temperature.
I served these up for breakfast instead of dessert with hot coffee instead of hot roobios tea as recommended and they were a huge hit with all of us.

Makoenva
These Cinnamon Rolls from the Country of Lesotho are a delicious start to the day or as a dessert after dinner.

Ingredients
- 2 t. yeast
- 1 T. sugar
- 1 cup lukewarm water (105-110*)
- pinch of salt
- 2 t. olive oil
- 2-3 c. flour
- 1/4 c. raisins
- Canola oil for frying
- Cinnamon Sugar
Instructions
- Combine yeast and sugar in the bowl of a stand mixer. Stir in the warm water and let set for about 5 minutes, until bubbly.
- Stir in the salt and oil. On low speed, using paddle attachment, start adding flour, a half cup at a time, until a ball is formed. Swich to the dough hook and continue to add flour until ball is no longer sticky. Knead in the raisins.
- Place cinnamon sugar into a paper lunch bag.
- Let set on counter for about an hour until doubled in size. Heat about 2" of oil in a large skillet. Stretch the dough and pull off pieces, rolling into a rough round. Fry in the hot oil until puffed and golden brown. I was able to fit about 5 at a time.
- Remove from oil with tongs and place into the paper bag. Shake to coat and remove to a plate.
