We had chili a lot while growing up. It was a great way for my Mom to feed a ton of hungry people with inexpensive ingredients. When there were more people at the table then chili, in would go the pasta to make it stretch even further. So easy, simple and delicious.
This is all made in one pot and makes a complete meal so clean up is a breeze as well. My Mom was all about convenience. Raising 6 children, working full time and maintaining a house kept her very busy as you might imagine. She wisely took shortcuts as often as she could.

ReplyDeleteThanks Kalyani
DeleteThis sounds delicious. I'm tempted to make it for dinner tonight! P.S. 6 kids and a full time job? Wow!
ReplyDeleteI think she had the job to get a break from the kids LOL.
DeleteWell that makes total sense, lol!
DeleteMy mom made something very similar but we called it goulash! Another of my favorite childhood meals.
ReplyDeleteYes, but our goulash didn't have beans in it. Love goulash as well.
DeleteYou are so right. Ours never had beans either.
DeleteI love chili mac! It definitely reminds me of childhood dishes - and I made it a lot in my early years of adulthood, I still make it probably a few times a year as a warm me up comfort food dish when the weather cools off!
ReplyDeleteIt is pure comfort food Rebekah.
DeleteMums definitely knew how to keep our tummy full on a small budget. We were a joint family and she had 15 mouths to feed! I spotted your summer veggie chili. Wouldn't mind using that recipe with pasta to make a veggie chili Mac.
ReplyDeleteWhat a great idea Mayuri.
DeleteI have never heard of this dish, but it looks delicious!
ReplyDeleteIt must be a midwest thing. It is pure comfort food.
