I served this up for a birthday dinner when my friend, Michelle, was in town from Texas. It was easy enough to leave time for visiting and elegant enough to make her birthday special.

Garlic Roasted Salmon with Brussels Sprouts
This scrumptious, savory, one pan dinner of Garlic Roasted Salmon with Brussels Sprouts is ready in less than an hour and clean up is minimal.

Ingredients
- 14 cloves of garlic, divided
- 1/4 c. olive oil
- 2 T. chopped fresh oregano
- salt and pepper, to taste
- 4 c. brussels sprouts, trimmed and sliced
- 1/2 c. dry white wine
- 4 (6-8 oz) portions salmon fillet
Instructions
- Mince two of the cloves of garlic and whisk in a bowl with the oil, 1 Tablespoon of the oregano, salt and pepper. Set aside.
- Halve the remaining garlic cloves and add to a large roaster along with the brussels sprouts. Add 3 Tablespoons of the reserved oil and toss to coat. Roast in a preheated 450* oven for 15 minutes, stirring once halfway through roasting time.
- Whisk the wine into the remaining oil mixture. Remove the roaster from the oven and stir the vegetables. Place the salmon fillet on top of the vegetables. Drizzle with the wine/oil mixture and season with remaining oregano, salt and pepper. Return to oven for 5-10 minutes depending on the thickness of the fillets, until just cooked through.
