If you are a regular reader of my blog, you know that I have been working to put on the Lenten Fish Fry Dinners for our Parish. It takes me and a whole slew of volunteers to feed 300+ people each Friday night. We work 3-4 hours on Wednesdays, 4-5 hours on Thursdays and 2-3 hours on Saturdays. This is for prep and clean up. Fridays? Well Fridays, I don't get there until around 11 and then I'm there until 8 or 9 pm.
One Friday, when I arrived at 11, a whole group of volunteers were already there and had everything done. I didn't have anything to do until I put the potatoes in to bake at noon. I so appreciated all their hard work I decdided to use my free time to make them lunch.
I pulled out some of the cod that was defrosted in the cooler and placed it on a baking pan. Then I slathered it with Miracle Whip and pepper. I crushed up some vinegar and salt potato chips and pressed them onto the top of the cod. Put the pan into the convection oven at 350* for a few minutes. Just long enough for me to open up a couple of packages of premade salad and put it in a bowl.
In less than 20 minutes, we were eating lunch and relaxing before the work began again at noon. One of our volunteers is gluten intolerant so this was a perfect recipe for me to make for us to enjoy. I think you will enjoy it as well.

Potato Chip Crusted Cod

Ingredients
- 20 pieces cod fillet
- 1/4 c. Miracle Whip
- Pepper, to taste
- 1/2 lg. bag Vinegar and Salt potato chips, coarsely crushed
Instructions
- Place the cod onto a parchment lined baking sheet.
- Mix together the Miracle Whip and pepper. Using a pastry brush, spread a thin layer of the dressing over each piece of cod. Press a small amount of crushed chips onto the top of each piece of fish adhering it with the dressing.
- Place into a hot 350* convection or 375* oven for 6 minutes. Turn pan and bake for an additional 5-6 minutes, until fish is flaky and chips are browned.
