This was our 3rd small Christmas gathering of the season. The Teen had asked to have her Aunt and Uncle come over because she was very excited about the gifts she had gotten for them and couldn't wait to share. I hadn't planned on having company for dinner but not wanting to disappoint her I told her to go ahead and see if they were available.
I decided to keep dinner simple and so filled up a sheet pan with some large boneless skinless chicken breasts that I sliced into uniform pieces instead of pounding them because they were just that big. Alternately, you can use smaller breasts. Then I filled a second sheet pan with some veggies that I had tossed with olive oil, salt and pepper.
Placed both trays in a preheated 375* oven and walked away for 50 minutes. When I returned, I checked the vegetables for tenderness and gave them a toss. I pulled out the chicken breasts and brushed them with the pepper jelly that I had melted with a little bit of water, before placing them back into the oven for another 10 minutes.

Pepper Jelly Glazed Chicken Breasts

Ingredients
- 6 (4-6 oz) boneless, skinless chicken breasts
- salt and pepper, to taste
- 1/3 c. pepper jelly (I used Hungarian Pepper Jelly)
- 2 t. water
Instructions
- Season the chicken breasts with salt and pepper. Place onto a baking sheet lined with parchment or a silicone mat. Place into a preheated 375* oven and bake for 45-50 minutes.
- Melt the water and jelly together in the microwave on high for about 30 seconds. Brush over the chicken breasts and return to the oven for another 10 minutes to set the glaze.

So, guess what? I may be almost out of fruit jams and preserves...but I have like 5 jars of pepper jelly! So...I'm pretty sure this recipe is in my future!!!
