Chocolate Cherry Brownie Bites
Ingredients
- 36 Frozen cherries, thawed
- 1 T. sugar
- 3/4 c. flour
- 1 T. baking cocoa
- 1/2 t. baking powder
- 1/2 t. instant coffee
- pinch of salt
- 1 stick butter
- 3 oz. chocolate chip (semi sweet)
- 2/3 c. sugar
- 2 eggs
- 1 t. vanilla
Instructions
- Place the cherries in a small bowl. Sprinkle with sugar and set aside.
- Whisk together the flour, cocoa, baking powder, coffee and salt. Set aside.
- Place the chocolate and butter into a small bowl and microwave on high in 30 second increments, stirring after each, until melted and smooth. Set aside.
- In large bowl of stand mixer, fitted with the paddle attachment beat the sugar, eggs and vanilla until thick, creamy and light yellow, about 4 minutes.
- Stir in the chocolate and flour mixtures.
- Using a small cookie scoop (1 Tablespoon) divide the dough into 36 mini muffin cups containing paper liners.
- Drain the cherries well and place one in the center of each brownie. Bake in a preheated 350* oven for 18 minutes, until a toothpick inserted removes cleanly.
- Let cool completely on a wire rack before trying to remove paper liners.
