Apple Tea Brined Pork Tenderloin
Ingredients:
- 2 pork tenderloin, silverskin removed
- 1 qt. water
- 8 cups ice
- 1 c. kosher salt
- 1 c. brown sugar
- 1 lg. carrot, peeled and chopped
- 4 celery ribs, chopped
- 1 sweet onion, chopped
- 8 cloves garlic, minced
- 6 Hot Apple Cider Tea Bags ( I used The Republic of Tea brand)
Instructions:
- Bring the water to a boil. Add the salt, sugar, carrot, celery, onions and garlic. Let cook for 5 minutes. Remove from heat. Add tea bags and let steep for 5 minutes longer. Remove tea bags and allow to cool to room temperature.
- Pour mixture into a large container and add the ice. Submerge the tenderloin in this mixture. I divided the mixture between 2 freezer bags and place a tenderloin in each. Cover and refrigerate overnight.
- Remove the tenderloins from the brine and pat dry. Heat a grill to med high and cook the tenderloin for about 15 minutes, turning halfway through the cooking time until an internal temperature of 145-160* is reached.
- Allow tenderloins to rest for 5 minutes before slicing and serving.
