Smoked 5 Cheese Mac and Cheese #OurFamilyDinner

This Macaroni and Cheese Casserole is a lovely combination of 5 different cheeses mixed together and smoked using cherry wood.

Frank's sister and her husband were joining us of dinner the other night.  We decided to serve some smoked baby back ribs.  I think Mac and Cheese is a great side for ribs and decided to put some together, using up the last bits and pieces of cream cheese and Mozzarella cheese in my refrigerator along with a Cheddar and Colby Jack Blend and some shredded Parmesan.  

Smoked 5 Cheese Mac and Cheese

I boiled up some pasta and then made a cheese sauce with butter, heavy cream, and the 5 cheeses.  Tossed the pasta in with tthe sauce and placed it into a casserole.  Topped it with a little more of the Cheddar/Jack blend and some panko bread crumbs and placed it in the refrigerator until I was ready to smoke it.

You can also bake this in an oven at 350* for 45-60 minutes until hot and bubbly but I had the smoker going for the ribs so I placed it in there for the last hour that they neeeded.   The smoke and a wonderful flavor to the Mac and Cheese.  My sister in law thought said it was the best Mac and Cheese she had ever had.  My heart sang.......

Smoked 5 Cheese Macaroni and Cheese

This Macaroni and Cheese Casserole is a lovely combination of 5 different cheeses mixed together and smoked using cherry wood.
Prep time: 10 MCook time: 1 H & 10 MTotal time: 1 H & 20 M

Ingredients:

  • 1 lb short pasta, cooked per package directions
  • 3 oz. cream cheese, cubed
  • 1/2 c. shredded Mozzarella cheese
  • 2 c. shredded Cheddar/Jack Blend , divided
  • 1/3 c. shredded Parmesan Cheese
  • 3/4 c. cream
  • 3 T. butter
  • salt and pepper, taste
  • 1/2 c. Panko Bread crumbs

Instructions:

  1. Place the cream cheese,  Mozzarella, 1 1/2 c. of Cheddar/Jack blend, Parmesan cheese, cream and butter in a large saucepan over med heat.  Cook and stir until melted and smooth.  Season with salt and pepper. 
  2. Add the drained pasta to the saucepan and stir to coat.  Turn into a 9x13" baking pan.  Sprinkle with remaining 1/2 c. of Cheddar/Jack blend and the bread crumbs.
  3. Place into a smoker set at 300* for one hour until hot, bubbly and lightly browned on top.
