Most of us, during this terrible pandemic, are trying to limit our trips to the grocers and live off items that we have on hand. Such is the case with this sandwich.
I had a couple of slices of onion rye that had seen better days, half of a red onion and some blue cheese crumbles that needed to be used up. What better to make than a grilled Blue Cheese and Onion Sandwich.
I started out by sauteing the onion in a little butter to soften them. Then I buttered the bread and added the goodies. Cook. low and slow. to give the cheese a chance to melt while the bread gets golden brown.
We love grilled cheese sandwiches and I am happy to have some new creations to try, however I"m sure our next one will be Grilled Ham and Cheese to use up some of this leftover Easter ham.

Grilled Blue Cheese and Red Onion Sandwich
Sauteed Sweet Red Onion and Tangy Blue Cheese Crumbles melted together onto slices of Onion Rye bread and grilled to perfection.
Prep time: 2 MCook time: 8 MTotal time: 10 M
Ingredients:
- 2 slices onion rye bread
- 1 T. + 1 t. butter
- 1 slice red onion, separated
- 1/4 c. crumbled blue cheese
Instructions:
How to cook Grilled Blue Cheese and Red Onion Sandwich
- Heat a griddle over med high heat. Place the 1 teaspoon butter and onions on the griddle and cook until softened.
- Use the remaining butter to butter each slice of bread. Put one slice of bread onto the griddle butter side down. Sprinkle with the blue cheese and move the onion from the griddle onto the blue cheese crumbles. Top with the second slice of bread, butter side up.
- Grill until the bottom slice of bread is golden brown and the cheese is beginning to melt, about 4 minutes. Flip and grill for another 3-4 minutes until second side is golden brown and cheese is melted.
- Serve immediately
