You might wonder why I would be using a slow cooker for a dish like Chicken Fajitas that only take minutes to make anyway as I have shown in this recipe for stove top fajitas.
Well here is the story....
Our daughter made her Confirmation last month. We were having a gathering at the house following the Mass and she requested that we serve Mexican food. This means that everyone would be coming over at the same time we returned home and I didn't want to be cooking while guests were here.
So I made dips that could be made ahead of time and casseroles that could be put into the oven by my friend Karen who stayed back from the ceremony to prepare for the guests while I was busy. I also made these wonderful chicken fajitas that were ready for us when we got home.
And that, my friends, is exactly what these small appliances that we love are for. They make our lives much easier and relieve some of the stress in our lives. That is a good thing.

Slow Cooker Chicken Fajitas
ll the ingredients for these chicken fajitas go into a slow cooker while you are busy living your life. When it's time to eat, shred the chicken, set out some tortillas and garnishes and dig in.

Ingredients:
- 5 lbs. boneless, skinless chicken breasts
- 2 (15 oz) cans diced tomatoes
- 6 bell peppers, assorted colors, seeded and sliced
- 1 large Vidalia onion, sliced
- 6 garlic cloves, minced
- 1 T. chili powder
- 3 t. ground cumin
- 2 t. paprika
- salt and pepper, to taste
- Tortillas and preferred toppings for serving
Instructions:
How to cook Slow Cooker Chicken Fajitas
- Pour one can of tomatoes into the slow cooker. Season the chicken breast with salt and pepper and lay on top of the tomatoes. Cover with the onions and peppers. Stir the chili powder, cumin and paprika into the second can of tomatoes and pour over the top.
- Cook on low for 6 -7 hrs. until chicken is cooked through. Remove the chicken to a cutting board and shred or slice. Return chicken to the slow cooker to rewarm while you heat the tortillas and gather the toppings.

Great to have going for a busy day! I would just need to remind myself to get the guack made and not keep people waiting. And sour cream. Yum!

DeleteWhen the girls were still at home and I was involved in many volunteer activities, the slow cooker got a regular work out. So nice to set it and come home to hot cooked meal. Bet your chicken fajitas disappeared quickly, Wendy. They look great!
