Today is the second installment of Holiday Side Dishes........

Today I am back with this tasty side dish and Friday I am sharing another vegetable side. This gives you plenty of time to plan your Holiday Menus.

Are you familiar with Chayote Squash? I had never heard of it until last year when I partook of an event called Freaky Fruits Friday. The participants received product from Melissa's Produce to use in the creation of recipes and included in the basket was Chayote Squash. I had to do some research and then I shared a recipe for Seafood Stuffed Chayote Squash. It was delicious and I was hooked.
Chayote Squash is part of the gourd family and is very mild tasting, much like summer squash but firmer. This means it lends itself well to be married with other flavors, in this case onions and bacon.....BACON!!
I found Chayote Squash at my International Marketplace and was excited to try this new recipe. I'm so glad I did and you will be too. Sauteed Chayote Squash with Bacon and Onions
Quick and easy to make, this Chayote squash flavored with bacon and onion makes a deliciously different side dish to your meal.
prep time: 10 Mcook time: 20 Mtotal time: 30 M
ingredients:
- 3 slices, thick cut bacon, diced
- 2 lg. Chayote squash, peeled, seeded and sliced into 1/4" moons
- 1 sweet onion, sliced into thin moons
- 3 cloves garlic, minced
- 2 T. dry white wine
- salt and pepper, to taste
- leaves from 1 sprig of thyme
- juice of 1/4 lemon
instructions:
How to cook Sauteed Chayote Squash with Bacon and Onions
- Place the bacon in a skillet over medium heat and cook until crisp. Remove to a paper towel lined plate to drain.
- Add the squash, onion and garlic to the bacon fat and toss to coat. Cook over medium heat, covered, stirring occasionally for about 10 minutes. The squash and onion should begin to brown.
- Stir in the wine, pepper and thyme. Cover and cook for another 10 minutes, until the squash is tender.
- Off heat, mix in the bacon and lemon juice. Taste and season with salt and more pepper, if desired.
