Chocolate Donuts with Chocolate Chips #Choctoberfest #BakingBloggers

C'mon in!!  We are celebrating the first day of Choctoberfest and this month's edition of Baking Bloggers in addition to Sweetest Day today........

October is a great month to celebrate Chocolate.  The weather starts cooling down making us in the mood for bonfires and S'mores.  We start turning off the grills and turning on the ovens for baked goods.  Sweetest Day is tucked right in the middle of the month and then the month finishes off with Halloween.

This is my first of four fun chocolate recipes that I will be sharing with you this week.  This wonderful event is hosted each year by Allison of Triple Chocolate Kitchen.  Putting on a week long event is a lot of hard work and Allison always does a great job.  Allison also arranged for some of the participating bloggers to receive product from Imperial Sugar and Divine Chocolate.

I used Imperial Sugar, exclusively in my recipes, regardless of the type of sugar used.  I received granulated sugar for this event but had Imperial brown sugar and Imperial powdered sugar in my baking cupboard.  I received no monetary compensation for these posts and all opinions, content and writings are strictly my own.

Since today also happens to be the second Monday of the month I am sharing this post with another fun group to which I belong called Baking Bloggers.

Baking Bloggers is led by Sue of Palatable Pastime.  Each month Sue has a poll and allows the group to vote on different themes.  The theme with the most votes is chosen and all of us bake accordingly.  This month's winner was donuts.

Since it is "Baking" Bloggers the donuts had to be baked.  This gave me an excuse to finally break down and buy some donut pans.

Since we were celebrating Chocolate with Choctoberfest it was a simple decision on what kind of donuts I would make.  I adapted a recipe that I found on the King Arthur website to make that satisfied both events and my Sweetests sweet tooths.  Would you say sweet teeth if you are talking about more than one sweetest?  Hmmmmmm.....I will wake up in the middle of the night pondering that one LOL.

Well, whether it is sweet tooth or sweet teeth there is sure to be a donut here to satisfy yours......

Whether you are serving these up to one sweetest or a whole family of sweetest it is sure to please them all.  These donuts are more like a fudgy cake or muffin studded with chocolate chips.  I thought I had died and and gone to chocolate heaven.

Chocolate Donuts with Chocolate Chips

Sweetest Day is coming up fast and these chocolate cake donuts studded with chocolate chips are sure to put a smile on the face of all your sweeties.

ingredients:

  • 2/3 c. baking cocoa
  • 1 3/4 c. flour
  • 1 1/4 c. brown sugar,  I used Imperial
  • 1 t. baking powder
  • 1 t. baking soda
  • 3/4 t. salt
  • 3/4 c. chocolate chips
  • 2  eggs
  • 3/4 c. milk
  • 2 t. vanilla
  • 2 t. cider vinegar
  • 1 stick, butter, melted

instructions:

How to cook Chocolate Donuts with Chocolate Chips

  1. In large bowl, whisk together the cocoa, flour, baking powder, baking soda, salt and chocolate chips.  
  2. In a 2 cup measuring cup, whisk together the eggs, milk, vanilla and vinegar. 
  3. Add the wet ingredients and the melted butter to the dry ingredients and stir with a wooden spoon or spatula just until blended.
  4. Spoon into donut  pans that have been treated with baking spray, filling each well about 3/4 full.  
  5. Bake in a preheated oven for about 15 minutes, until a skewer inserted removes cleanly.   Cool briefly in the pans and then turn onto a wire cooling rack.  You may need to loose the edges and bottoms of the donuts with a small spatula.

  2. Chocolate is such a versatile ingredient -- it's hiding in various not-at-all-sweet recipes too. We recently fell in love with a barbecue sauce that had a hint of chocolate, and it's also possible in chili (think Mexican Molé). But I am tempted by all the sweets too.

Disappointed I didn't get to participate with you all this year, but at least I get to enter the amazing giveaway! :) I would love to win that $100 Nordic Ware Gift Card, because who doesn't need more kitchen tools?! I see you finally got a donut pan... I still haven't gotten one yet. You're donuts turned out perfect, I'd love to have one with a cup of coffee right now.
