Traditionally you would use Bolillo rolls for these hot dogs. I had never heard of Bolillo Rolls but when I went to the restaurant and tried one of these Sonoran Hot Dogs I thought the taste and texture was very similar to Hawaiian King Rolls so that is what I used for my version.
The restaurant that we went to had a huge bar filled with condiments surrounded by picnic tables where everyone sat together finding a seat where ever there was room. The bar was filled with lettuce, cucumber slices, numerous types of peppers and pickles and condiments of all sorts. I kept my toppings much simpler, salsa verde, chopped cherry tomatoes, pickled jalapenos, shredded cheese and a sauce made of Miracle Whip or Mayo if you prefer, lime juice and zest, and hot sauce.
These were a big hit with the Teen and her friends who were enjoying a fun day in the pool. I think they would be a great addition to your next BBQ served up with a Margarita or Cervesa. Cheers......

Hot dogs wrapped in bacon and grilled until crisp then placed onto a sweet that has been slathered with refried beans and topped with tomatoes, salsa verde, shredded cheese and spicy sauce.
ingredients:
- 8 Hot Dogs
- 8 thin slices of bacon
- 8 Hawaiian King Hot Dog Rolls
- 1 c. refried beans, warmed
- diced cherry tomatoes
- pickled jalapeno's diced or sliced
- salsa verde
- shredded Mexican blend cheese
- 1/4 c. Miracle Whip
- 1/2 T. hot sauce
- zest and juice of one lime
- salt and pepper, to taste
instructions:
How to cook Sonoran Hot Dogs
- Wrap one slice of bacon around each hot dog. Securing with toothpicks, if necessary.
- Grill over medium heat until the bacon is very crisp.
- While hot dogs are cooking, whisk together the Miracle Whip, lime zest, lime juice and hot sauce. Taste and season with salt and pepper as needed.
- Put a shmear of beans onto each roll and place a hot dog on top. Pass the cheese, jalapenos, salsa, tomatoes and sauce for people to top as desired.

Well, great minds do think alike! I do have a recipe for bolillos btw, but I love the idea of the Hawaiian rolls. Love the char on your dogs too.

DeleteI love the sound of these Mexican-inspired hot dogs! The toppings are killer. I see bolillo rolls in my grocery stores all the time, but I wonder if it's because I live in Texas!
