I made up this soup for a busy Taco Tuesday dinner after running errands all day. We got home from the orthodontist, our last stop, and were starving. This soup, using leftover chicken, was ready in half an hour. That is a Win/Win in my book. A quick, delicious meal that uses leftovers......

I find food inspiration in nearly every book I read. When I act on that inspiration I share the recipes at a linkup called Foodies Read led by Heather of Based on a True Story. Of course, if it is a Lit Happens selection I also post it on our Facebook page.
That is the case with this recipe that I'm sharing with you today. The Lost Letters of William Woolf is not a Foodie Read but there is a lot of food mentioned throughout the story of Lost Letter Detective William Woolf.
William, an author suffering writer's block, gives up on his dream and inherits a job as a Detective in the Dead Letter Depot of the Post Office. The Dead Letter Depot is where the packages, letters, and parcels that have had addresses smeared, damaged or omitted go to wait for one of the Detectives to open it and try to find the intended recipient of items that hold any value.
William loves the job more than he thought possible. He loves solving the mysteries and he loves the grateful happiness of those persons who finally are in receipt of treasures or answers of which they had given up hope.
Williams job takes on even more importance as his home life and marriage deteriorate. As he spends more time burying his unhappiness in his work he comes across some letters addressed only to "My Great Love". This sends William off on a journey to not only solve the mystery of the letters but also on a journey of self discovery and discovery of what love truly is.
I'll tell you what I love......I love this novel and I love the soup that was inspired by the foods mentioned in the book. Soup is mentioned several times and the writer of the letters referred to a Mexican Restaurant where she loved to eat, always hoping to run into her Love.

Chicken Enchilada Soup
prep time: 5 Mcook time: 20 Mtotal time: 25 M
Filled with all the flavors of Chicken and Cheese Enchiladas this soup is ready in less than an hour. Serve with a side of Corn Bread and a Margarita for a Fiesta in the middle of the week.
ingredients:
- 6 c. chicken stock
- 1 t. onion powder
- 1/2 t. garlic powder
- 1 t. chili powder
- 1/2 t. cumin
- pinch of ground coriander
- dash of cayenne pepper
- 1/3 c. masa harina
- 8 oz. Velveeta Cheese, cubed
- 2 cups, diced cooked chicken
- salsa for topping, if desired
- Crushed corn chips for topping, if desired
instructions:
How to cook Chicken Enchilada Soup
- Heat the chicken stock in a soup pot over med high heat. Stir in the onion powder, garlic powder, chili powder, cumin, coriander and cayenne. Bring to a boil and whisk in the masa harina. Cook for a couple of minutes, until the broth starts to thicken.
- Reduce heat to a simmer and stir in the chicken and cheese, whisking until cheese is melted and soup is smooth. Ladle into bowls and serve with salsa and crushed corn chips for each to add to the soup as desired.
