We are sharing Easter recipes today with the folks at the From our Dinner Table group......
The wonderful thing about this dish is that it is made in a slow cooker. I find slow cooker recipes indispensable on Holidays when you need your stove top and ovens free for other dishes.
I don't know how Easter goes at your house but at ours it is something like this.....
- We attend and sing at Easter Vigil which starts a 9 pm on Saturday night and lasts until nearly midnight.
- Easter morning we get up and get the house straightened and the eggs and baskets hidden.
- Frank attends and sings at 11:30 Mass while I start dinner and set the table.
- Guests start arriving around 2 pm. There will be appetizers, including these delicious sweet and sour sausage bites.
- When the Angel Face arrives we start the egg and basket hunt.
- Dinner is served at 5 pm.
I'm always looking for new recipe ideas for Holidays so I was glad that Christie of A Kitchen Hoor's Adventures planned this event in plenty of time for me to plan my Easter Menu. Let's see what recipes we have to choose from.......

Sweet and Sour Sausage Bites
prep time: 5 minscook time: 2 hourtotal time: 2 hours and 5 mins
This easy and delicious sweet and sour smoked sausage is the perfect dish to serve during Easter Brunch. It is also wonderful as an appetizer before Easter dinner or as a second or third meat dish with your Baked Ham and/or Roasted Leg of Lamb.
ingredients:
- 2 (14 oz) cans of pineapple chunks, drained and liquid reserved
- 2 1/2 T. cornstarch
- 1 t. salt
- 1 c. maple syrup
- 2/3 c. water
- 2/3 c. apple cider vinegar
- 2 lbs. smoked sausage, sliced and browned
- 1 c. maraschino cherries, drained
- 3 bell peppers, seeded and cut into chunks, I used red, orange and yellow
instructions:
- Whisk together the reserved pineapple juice with the cornstarch, salt, syrup, water and vinegar.
- Place the sausage, cherries and pepper chunks into the crock of a slow cooker. Pour the pineapple juice mixture over all, and stir to combine.
- Heat in slow cooker over low heat for 2-4 hours.
NOTES:
This dish can also be served as a main course over steamed rice. Adapted from a recipe found in Louisiana Entertains, submitted by Marilyn Carlton.
