I took an unplanned midweek break because I failed to read all of the directions for this event and doubled up with other events. This was against the rules so I posted with the other events and am returning today and tomorrow to finish off this fun event.

Today I am back with some cookies, featuring not one but two of the wonderful extracts that I received from Adams Best. I used the vanilla in the cookie part of this recipe and the peppermint for the frosting. If there is a more festive flavor than Chocolate Peppermint, I have yet to discover it.
I was lucky enough to have a little Elf helping me with these cookies. It is always fun baking with my tiny sous chef.

Peppermint Brownie Bites

Fudge-like, brownie, cookies topped with peppermint icing and a piece of peppermint for the perfect Christmas treat.
ingredients:
1 c. flour
1/2 c. unsweetened baking cocoa
1/2 t. baking powder
pinch of salt
3 T. butter, melted and cooled
3/4 c. sugar
2 T. honey
1 t. vanilla
1 egg white
1 c. powdered sugar
1-2 T. heavy cream
1/2 t. peppermint extract
round, hard, peppermint candies , broken into chunks for garnish, if desired.
instructions:
Combine flour, cocoa, baking powder and salt. Whisk together the sugar, butter, honey, vanilla and egg white. Stir the flour mixture into the sugar mixture until just blended.
With greased or wet hands, form the mixture into 1" balls. The dough is very sticky and not conducive to a cookie scoop. I had to wet my hands after every few balls.
Place the balls onto a parchment or silicone lined baking sheet and bake in a preheated 350* oven for 7-9 minutes, until slightly cracked on top.
Let cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
Sift the powdered sugar into a bowl. Add 1 Tablespoon of the cream and the peppermint extract. Stir, adding more cream, a teaspoon at a time, until you have reached the desired consistency for frosting.
Spread each cookie with a little frosting and top with a mint chunk, if desired.
